  1. Always use iron or aluminum kadai for making kulfi.
  2. After the milk boils, cook on low heat, stirring constantly.
  3. Remove the cream that has collected on the sides of the pan and mix it into the milk.
  4. Boil the milk until it is less than half the amount of milk you started with.
  5. Some people use corn flour to thicken the Kulfi mixture, but you can add extra malai and ground almonds for a better texture.
  6. Allow the mixture to cool completely before pouring into the kulfi moulds.
  7. Kulfi takes 7-8 hours to set completely, so don’t open the fridge in between.
  8. To prevent ice crystals from forming, cover the Kulfi mixture with silver foil after pouring it into the mold or bowl. If you are freezing it in a container, stir it after 2-3 hours and cover it again.

To make Malay Kulfi at home, pour 2 liters of milk in a pan and boil. Boil the milk until reduced by half, about 20 minutes. Then add half a cup of sugar, malai and almond powder and cook while stirring. When the mixture thickens, turn off the gas and let it cool completely. Pour the mixture into a Kulfi mold or bowl and leave it for 7-8 hours or overnight.
